I love this healthy and delicious breakfast recipe! I make these healthy egg muffins once or twice a week.

Some of you know that I've been on a journey to get healthy and fit for almost a year now. I made a decision last May that I wanted to lose 30 pounds and feel better.

I found a plan that works for me that involves healthy eating and nutrition, and in just a few months I was able to achieve my goal weight. Now, I'm excited to share one of my favorite secret weapons with you. This healthy and yummy recipe!

When I first started, I was eating a lot of boiled eggs. Full disclosure, I love them and I have tips on how to get them perfect, too, but these have more flavor.

All you have to do is chop and sautee your favorite veggies, then place them in a muffin tin, and add whisked eggs. I actually blend 10-12 eggs in my nutribullet, because it's fast and easy. Also, I don't add salt to my veggies. I stick with only black pepper.

I bake mine for 30 minutes at 300 degrees, and they are amazing each time.
