I don't know what it is exactly, but there's something exciting about happening upon a gathering of food trucks. Maybe it's the colorful, pop-up vibe they bring to our streets. Infused with personality, they just scream "friendly, fun, and delicious!" I swear, Disney could make their next animated feature about personified food trucks. (Makes note to email Disney.)

In addition to how much we love them as consumers, I've talked with several people who have owned and operated food trucks, and mostly? They seem to really enjoy it. It's an opportunity to be an entrepreneur without too much overhead, relatively-speaking. And, they get to offer something to East Texans they really, really want. GREAT FOOD. Wherever they are.

If your interest is piqued, check this out: Food Worx, at 1523 E. Erwin St. in Tyler, is currently the only community kitchen space and food truck biz incubator. They will help answer your questions about permitting, licensing, and provide educational opportunities. For example, coming up this month, they're offering a day class from 10 a.m. to 4 p.m. about starting up your food truck business in East Texas, specifically. The event is tentatively set for January 21, but they did ask me to let you know it could change due to an unforeseen circumstance. Connect with them to stay updated.
