Thank goodness for grandparents!  Susie and Jesse are out of school for the week but obviously, mommy still has to work.  My mom and dad have lovingly agreed to take them and spend some precious Grandmother/Grandfather time with them this week!  As we speak, they are in the kitchen making "Forgotten Cookies" with their adored "Gran-Ann".  Anyone ever try these?  They are so easy. My boyfriend and I made some a couple of weekends ago and learned the important lesson that this is one recipe you can not double!  We made three batches before we figured that tid bit out!  Okay, he called it WAY before I did.  Enjoy the recipe!  Let me know how they turn out!  I make one batch without the nuts, one with, and one with peppermint instead of chocolate chips!

Ingredients:
*   2 egg whites, at room temperature
*   2/3 cup sugar
*   pinch salt
*   1 teaspoon vanilla
*   1 cup finely chopped pecans
*   1 cup chocolate chips

Preparation:
Preheat oven to 350°. Beat egg whites until foamy. Gradually add sugar and continue beating until they hold stiff peaks. Add salt and vanilla. Stir well. Stir in pecans and chocolate chips. Cover cookie sheet with foil and grease with butter or margarine. Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off. Leave overnight in oven with door closed.
