With any list, it's important that you narrow down the parameters you're working with. First off, there's nothing like a big Texas steak, but I would counter that a steak is a steak and not a "dish".

I'm also going to eliminate "Tex-Mex". While the cheesier types of Mexican food are actually some of my favorites, they are more of a whole category than a specific dish. That's a real problem because it's hard to elevate one item above the rest (but if we were, it would probably be fajitas)
Then there are those foods that are closely tied with Texas that we also share with other states. Chicken and Dumplings is both very Texas and very universal. Catfish is in the same category.
The Heart Of Texas Food: Five Dishes You Should Know
So what we have left are five items that are Texas through and through, so let's get started with Five Iconic Texas Dishes.
#1. Barbeque. Yes, barbeque is all over, but Texas barbeque is different and usually involves a very specify ingredient, brisket. While we'll smoke anything around here, that brisket is the first thing that comes to mind when we hear "barbeque".
#2. Frito Pie. Yes, it's trashy and simple, but it's very Texas and it's very popular. I'd love to apologize more for this, but it just wouldn't be heartfelt. I love Frito Pie.
#3. Chicken Fried Steak. Other states attempt to make chicken fried steak but most fail miserably. I think the white grave is the key.
#4. Chili. Texas chili is a thing. We have chili competitions and chili festivals, but I'm going to say nothing beats a bowl of homemade chili.
#5 Biscuits And Gravy. You may be thinking "How is that Texas?" but trust me when I tell you it's hard to get a decent plate of biscuits and sausage gravy outside of Texas.
#Runner up. It's not a dish, but bacon-wrapped stuffed jalapenos is very much a Texas thing that should be mentioned. We even have fun names for them like "Armadillo Eggs" and "Texas Twinkies", but are commonly referred to as "Poppers".
